Wholesome Breakfast: Protein Quinoa Pudding with Raw Balls
Ingredients (6 serves)
1 cup quinoa
4 cups unsweetened coconut milk
3 Tbsp rice syrup
2 bananas
Water
6 raw balls, Real Rad Food ("Salty Caramel" with peanuts is our fave!)
1 Tbsp flaked/shredded coconut
1 Tbsp roasted peanuts, chopped
Method
Place quinoa in a colander. Rinse thoroughly with cold water and allow to drain.
In a medium pot, combine quinoa, coconut milk, and syrup. Bring to boil over medium heat. Reduce heat to a low, simmer for 15/20 minutes half-covered so some steam may escape. Stir about every 2-3 minutes.
In the meantime, add the bananas and the protein powder to the blender. Add a bit of water if needed. Blend.
Remove the lid, add banana+powder, stir, and continue simmering for 3 more minutes or until the pudding has thickened and the quinoa has absorbed most (but not all) of the milk. Remove from heat.
Pour into bowls and allow to cool for a few minutes before serving (pudding will continue to thicken as it cools). Top with a Raw Ball each, and sprinkle with coconut and peanuts.
Enjoy! You won't feel hungry for several, several hours after having such a wholesome breakfast!
